Cheesy Carrot Flatbreads
Ingredients (makes 6–8 flatbreads)
- 1 cup grated carrot (finely grated)
- 1 cup all-purpose flour
- ½ cup shredded cheese (cheddar, mozzarella, or a mix)
- ¼ cup plain yogurt (or milk)
- 1 tbsp olive oil
- ½ tsp baking powder
- ½ tsp salt
- Optional:
- ¼ tsp garlic powder
- ¼ tsp paprika or black pepper
- Chopped herbs (parsley or chives)
Instructions
- Prep the carrots
Grate the carrots finely and squeeze out excess moisture using a clean cloth or your hands. - Make the dough
In a bowl, mix flour, baking powder, salt, and optional spices.
Add grated carrots, cheese, yogurt, and olive oil.
Mix until a soft dough forms. If sticky, add a little flour; if dry, add a teaspoon of milk. - Rest & divide
Cover and let rest for 10 minutes.
Divide into 6–8 equal balls. - Roll out
