Basic Pastina Soup Recipe
Ingredients
-
4 cups chicken broth (or vegetable broth)
-
½ cup pastina (tiny pasta stars or dots)
-
1 egg (optional but traditional)
-
2–3 tbsp grated Parmesan cheese
-
1 tbsp butter or olive oil
-
Salt & black pepper to taste
Instructions
-
Bring the chicken broth to a gentle boil in a pot.
-
Add the pastina and cook according to package instructions (usually 4–6 minutes).
-
Reduce heat. If using an egg, beat it in a small bowl and slowly stir it into the soup while mixing (this makes silky egg ribbons).
-
Add butter and Parmesan cheese.
-
Season with salt and pepper.
Serve warm. It should be slightly creamy and very comforting.
Optional Add-ins
-
Shredded chicken
-
Finely chopped carrots or spinach
-
Garlic sautéed in olive oil
-
A squeeze of lemon for brightness
💡 Tip: For the creamiest “Italian grandma style” pastina, cook the pasta directly in the broth until it absorbs some liquid.
